Challah French Toast with Rhubarb Berry Glaze

If you’re jewish, you know half the fun of the holidays is all the delicious food you enjoy with family and friends. And with eight nights of Hanukkah, there’s a lot of yummy coming your way, including this Challah French Toast with Rhubarb Berry Glaze from Lauren Kelp! Though Constance’s recipe called for brioche, we’re getting in the Hanukkah spirit and using challah instead. Start your celebrations with this scrumptious treat and you’ll have a very happy Hanukkah!

Challah French Toast with Rhubarb Berry Glaze

Serves 0Ingredients
  • 1 loaf of fresh challah cut into 1-inch slices
  • 6 large eggs
  • ½ cup superfine sugar
  • 4 cups of whole milk
  • ½ cups fresh finely chopped rhubarb
  • 1 cup of boysenberry jam (substitute blueberry)
  • 1-2 tbsp of water
  • 1 pinch of fine salt
  • ½ tsp of pure vanilla extract
  • ½ tsp of pure lemon extract
  • Powdered sugar (optional)
Instructions
  1. In a large bowl, whisk together eggs, milk, sugar and cinnamon.
  2. Coat front and back of each slice of challah.
  3. Place one slice at at a time in a skillet over medium heat until lightly browned.
  4. Flip and brown the opposite side.
  5. Combine rhubarb, jam, salt, and water in a small saucepan and simmer until the rhubarb gets translucent and syrupy (about 10 minutes). If the glaze appears too thick, add a bit more water.
  6. Remove from heat and add vanilla and lemon extract.
  7. Let cool slightly.
  8. Top brioche toast with glaze and powdered sugar (if desired) and serve immediately.
  9. Enjoy!
